INGREDIENTS
125g Lean Ground Turkey (93% lean)
50g diced Carrot
50g diced Onion
30g diced Celery
50g Green Peas
1 tsp Olive Oil
150g Cauliflower
1 clove Garlic, minced
0.5 cup Low-Sodium Chicken Broth
1 tsp Dried Thyme
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
In a skillet, warm the olive oil over medium heat and add the diced onion, carrot, celery, and minced garlic. Sauté until the vegetables soften, about 3-4 minutes.
Add the lean ground turkey to the skillet and cook until browned, breaking it up with a spoon. Stir in the green peas, dried thyme, salt, and pepper. Pour in the chicken broth and let simmer for another 3-4 minutes until flavors meld. Remove from heat.
Meanwhile, steam the cauliflower florets until tender, about 6-8 minutes. Then mash the steamed cauliflower until smooth, seasoning with a pinch of salt and pepper.
Spread the turkey and vegetable mixture evenly in a small baking dish. Top with the mashed cauliflower, smoothing it out with a spatula.
Bake in the preheated oven for 10-12 minutes until the top is slightly golden. Serve warm and enjoy your hearty yet lean shepherd's pie.
