INGREDIENTS
1.5 cups riced cauliflower (150g)
1 large egg white (33g)
1/4 cup shredded low-fat mozzarella cheese (28g)
3 ounces chicken breast (85g)
2 tablespoons BBQ sauce
1/3 medium red onion, sliced (30g)
1 tablespoon fresh cilantro, chopped
Salt & pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a bowl, combine the riced cauliflower, egg white, 1/8 cup (half of the cheese) and a pinch of salt and pepper to form a cohesive mixture. Press this mixture out onto the parchment paper into a thin, even circle to form the crust.
Bake the cauliflower crust in the preheated oven for 15-18 minutes until it begins to turn crispy and slightly golden.
While the crust bakes, season the chicken breast with salt and pepper. Grill or sear the chicken until fully cooked, then dice or shred it.
Remove the crust from the oven and spread the BBQ sauce evenly over the top. Sprinkle the remaining 1/8 cup of cheese evenly, then distribute the cooked chicken over the sauce.
Top with sliced red onion.
Return the pizza to the oven and bake for an additional 8-10 minutes until the cheese is melted and the edges of the crust are extra crispy.
Garnish with fresh cilantro before serving.
