INGREDIENTS
3 oz Chicken Breast
2 oz Whole Wheat Pasta (dry)
1 cup Fresh Spinach
1 Garlic Clove
1 tbsp Low-Fat Cream Cheese
1 tbsp Grated Parmesan Cheese
1/2 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Begin by cooking the whole wheat pasta in a pot of salted boiling water according to package directions until al dente; drain and set aside.
While the pasta cooks, pat dry the chicken breast and season lightly with salt and pepper.
Heat olive oil in a skillet over medium heat. Add the chicken breast and cook for about 5-6 minutes per side or until fully cooked through. Once done, slice the chicken into bite-sized strips.
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn.
Lower the heat and add the low-fat cream cheese, stirring to combine with the garlic. If needed, add a splash of water or a little of the pasta cooking water to help create a smooth, light sauce.
Toss in the fresh spinach and allow it to wilt slightly in the warm sauce.
Add the cooked pasta and chicken slices to the skillet, stirring gently until everything is well combined and coated in the creamy garlic sauce.
Finish by sprinkling grated Parmesan cheese over the top, adjust salt and pepper if needed, and serve immediately.
