3 Large Eggs
3 ounces Turkey Sausage

PREPARATION
Peel and dice the sweet potato into small cubes. Dice the red bell pepper and yellow onion, and roughly chop the spinach.
In a non-stick skillet, heat the olive oil over medium heat. Add the diced sweet potato and cook for about 8-10 minutes until it starts to become tender and slightly crispy.
Add the diced onion and red bell pepper to the skillet, cooking for another 3-4 minutes until they soften.
Add the turkey sausage, crumbling it into the pan, and cook until it’s heated through and begins to brown.
Push the mixture to the side of the pan and crack the eggs into the cleared space. Season with salt and pepper. Allow the eggs to cook to your desired doneness (sunny side up or lightly scrambled).
