INGREDIENTS
7.5 oz Atlantic Salmon Fillet
6 Asparagus Spears
1 cup Cauliflower florets
2 tsp Olive Oil
1 tsp Garlic Powder
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt, pepper, and garlic powder.
Heat a non-stick skillet over medium-high heat and add a small drizzle of olive oil.
Place the salmon skin-side down in the skillet and sear for about 3-4 minutes, then flip and cook for another 3-4 minutes until the salmon is cooked to your desired doneness.
While the salmon cooks, trim the asparagus and steam them for 4-5 minutes until tender but still crisp.
Steam the cauliflower until very tender, about 8-10 minutes, then transfer to a bowl.
Add the remaining olive oil and a pinch of garlic powder to the cauliflower, then mash until smooth. Season with salt and pepper to taste.
Plate the salmon with a side of steamed asparagus and a generous serving of cauliflower mash. Serve immediately.
