PREPARATION
Prepare the sushi rice by gently folding in rice vinegar until evenly seasoned. Allow rice to cool to room temperature.
Slice the salmon into thin strips suitable for rolling. If desired, lightly season with a pinch of salt.
Dice the avocado into thin strips or small chunks, and slice the cucumber into matchstick pieces.
