Preheat your oven to 400°F.
Wash the red potato thoroughly. Cut the potato into bite-sized cubes for crispiness.
Place the potato cubes on a baking sheet and drizzle with olive oil, salt, and pepper. Toss to coat evenly.
Roast the potatoes in the oven for 20-25 minutes until they begin to turn crispy and golden, stirring halfway through.
While the potatoes are roasting, prepare the salmon. Pat the salmon fillet dry with a paper towel.
In a small bowl, combine lemon juice, chopped fresh herbs, minced garlic, a pinch of salt, and pepper.
Place the salmon fillet on a second baking sheet lined with parchment paper. Brush the lemon-herb mixture generously over the top of the salmon.
Once the potatoes have roasted for 20-25 minutes, place the salmon in the oven alongside them. Roast the salmon for 10-12 minutes, or until the fish flakes easily with a fork.
Remove both the salmon and potatoes from the oven. Serve the roasted salmon alongside the crispy red potatoes, drizzling any remaining lemon-herb mix over the top for extra flavor.
