INGREDIENTS
5 oz Lean Ground Turkey
1 medium Bell Pepper
1/2 cup Cooked Brown Rice
1/4 cup Tomato Sauce
1/4 cup Diced Onion
1 tsp Olive Oil
1 clove Garlic, minced
Salt and Pepper to taste
PREPARATION
Preheat your oven to 375°F.
Slice the top off the bell pepper and remove seeds and membranes. Set aside.
Heat olive oil in a small skillet over medium heat. Sauté diced onion and minced garlic until soft and fragrant, about 2-3 minutes.
Add the lean ground turkey to the skillet and cook until it starts to brown, breaking it up into small pieces. Season with salt and pepper.
Mix in the cooked brown rice and tomato sauce with the turkey and onion mixture. Let it cook together for another 2 minutes.
Stuff the bell pepper with the turkey and rice mixture, packing it well.
Place the stuffed bell pepper in a baking dish. Cover with foil and bake in the preheated oven for 25-30 minutes until the pepper is tender and the filling is heated through.
Remove foil, check seasoning, and serve warm.
