INGREDIENTS
6 oz Cod Fillet (~170g)
1 small Turnip (~100g)
1 tbsp Olive Oil (for roasting)
1 tsp Olive Oil (for searing)
3 oz Nonfat Greek Yogurt (~85g)
2 tbsp Fresh Mixed Herbs
1 tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F. Peel and cube the turnip into bite-sized pieces.
Toss the turnip cubes with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet.
Roast the turnips in the oven for 20-25 minutes until tender and slightly caramelized, stirring once halfway through.
While the turnips roast, pat the cod fillet dry with paper towels and season both sides with salt and pepper.
Heat 1 teaspoon of olive oil in a non-stick pan over medium-high heat. Once hot, place the cod fillet in the pan and sear for about 3-4 minutes on each side until the outside is crispy and the inside is opaque.
In a small bowl, mix the nonfat Greek yogurt with the fresh mixed herbs and lemon juice to create a tangy herb sauce.
Plate the crispy cod fillet with a side of roasted turnips and drizzle or serve alongside the lemon-herb yogurt sauce.
