Egg White and Turkey Spinach Scramble with Roasted Sweet Potatoes
Enjoy a savory morning scramble featuring fluffy egg whites, lean turkey breast, and fresh spinach paired with perfectly roasted sweet potatoes. This balanced breakfast delivers a satisfying mix of protein, natural sweetness, and a hint of olive oil for breakfast nourishment.
INGREDIENTS
5 egg whites (approx. 150g)
2 oz diced turkey breast (approx. 56g)
1 cup raw spinach (30g)
1 medium sweet potato (114g)
1 tbsp olive oil (14g)
Salt & Pepper to taste
PREPARATION
Preheat the oven to 400°F (200°C). Scrub the sweet potato, then pierce it several times with a fork. Place it on a baking sheet and roast for 35-40 minutes until tender.
While the sweet potato roasts, heat half the olive oil in a nonstick skillet over medium heat.
Add the diced turkey breast to the skillet and sauté for 3-4 minutes until lightly browned.
Add the raw spinach to the skillet with the turkey and cook until wilted, about 1-2 minutes.
Pour in the egg whites and gently scramble with the turkey and spinach until the eggs are fully cooked, about 3-4 minutes. Season with salt and pepper to taste.
Once the sweet potato is roasted, slice it open and fluff the inside with a fork. Drizzle the remaining olive oil over the sweet potato if desired.
Plate the turkey-spinach scramble alongside the roasted sweet potato and serve warm.
