Seared Salmon with Garlic Green Beans and Cauliflower Mash
Enjoy this elegant dinner of perfectly seared salmon paired with garlicky green beans and a creamy cauliflower mash. The crispy exterior of the salmon gives way to a tender, juicy interior, while the fresh green beans offer a burst of flavor enhanced by garlic and a hint of butter, and the cauliflower mash provides a light, velvety complement. A drizzle of olive oil ties the whole dish together for a satisfying, balanced meal.
INGREDIENTS
6.5 oz Salmon Fillet (approx. 185g)
1 cup Green Beans (125g)
1 cup Cauliflower (107g)
0.5 tbsp Extra Virgin Olive Oil (7g)
0.5 tsp Unsalted Butter (2.5g)
2 cloves Garlic
PREPARATION
Pat the salmon fillet dry and season lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat with a drizzle of olive oil. Sear the salmon skin side down for about 3-4 minutes, then flip and cook for another 3-4 minutes until cooked through and golden.
In a separate pan, lightly sauté minced garlic in a small amount of butter. Add the green beans and toss until they are tender-crisp and coated with the garlicky butter.
Steam or boil the cauliflower until soft. Drain well and mash with a fork or blender until smooth. Stir in a small drizzle of olive oil, and season with salt and pepper to taste.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Garnish with a squeeze of fresh lemon if desired.
