150g Green Beans
1 tsp Olive Oil
1/2 Lemon
2 cloves Garlic
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 425°F (220°C) to roast the green beans.
Rinse the green beans and trim the ends. Toss them in half of the olive oil, a pinch of salt, and black pepper. Spread them out on a baking sheet.
Place the green beans in the oven and roast for about 15-20 minutes, until tender and lightly browned.
While the green beans are roasting, season the chicken breast with salt and pepper on both sides.
Finely mince the garlic and zest half a lemon. Squeeze the lemon juice over the chicken, and sprinkle with the garlic and lemon zest.
Heat the remaining olive oil in a skillet over medium-high heat.
Once the oil is shimmering, add the chicken breast. Sear for about 5-7 minutes on one side until golden, then flip and cook for another 5-7 minutes until the internal temperature reaches 165°F (74°C).
Remove the chicken from the skillet and let it rest for a couple of minutes.
Serve the pan-seared chicken breast alongside the roasted green beans. Optionally, drizzle any leftover pan juices over the chicken for extra flavor.
