Enjoy a beautifully seared salmon fillet with a crisp, golden exterior paired with vibrant, lemon-herb roasted asparagus. The dish balances rich, flavorful fish with the fresh, zesty notes of lemon and herbs, making it a perfect, light yet satisfying meal.
INGREDIENTS
6 oz Salmon Fillet (170g)
8 spears Asparagus (134g)
1 tsp Olive Oil (5g)
1 Lemon Wedge (15g)
1/2 tsp Garlic Powder
Salt & Black Pepper to taste
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with salt, black pepper, and garlic powder.
Heat a non-stick skillet over medium-high heat and add the olive oil until shimmering.
Place the salmon skin-side down (if applicable) and cook for about 4-5 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes until the fish is just cooked through.
Meanwhile, preheat your oven to 425°F (220°C). Toss the asparagus spears with a small drizzle of olive oil, a pinch of salt, and black pepper on a baking sheet.
Roast the asparagus in the oven for 8-10 minutes until tender-crisp. Squeeze fresh lemon juice over the asparagus as soon as it comes out of the oven.
Plate the salmon alongside the roasted asparagus and garnish with additional lemon zest or a wedge, if desired.
