INGREDIENTS
6 oz Cod Fillet
1 tsp Olive Oil (for cod)
2 cups Fresh Spinach
1 tsp Olive Oil (for spinach)
1 clove Garlic, minced
1/2 cup cooked White Rice
Salt and Pepper to taste
PREPARATION
Rinse the cod fillet and pat dry with paper towels. Season both sides with salt and pepper.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium-high heat. Once heated, add the cod fillet and sear for about 3-4 minutes on each side until the fish is opaque and flakes easily with a fork. Remove the cod from the skillet and keep warm.
In the same skillet, add 1 teaspoon of olive oil. Add the minced garlic and sauté for 30 seconds until fragrant.
Add the fresh spinach to the skillet. Sauté for 2-3 minutes until the spinach wilts. Season lightly with salt and pepper.
While cooking the cod and spinach, prepare the white rice as per package instructions to yield 1/2 cup cooked rice.
Plate the cod alongside the garlicky spinach and serve with the fluffy white rice on the side. Enjoy your balanced meal!
