INGREDIENTS
8 oz Crawfish Tails (227g)
1 medium Zucchini (196g)
1/3 cup Nonfat Greek Yogurt (80g)
2 teaspoons Olive Oil (9g)
2 cloves Garlic
1 tablespoon Lemon Juice
Salt and Pepper to taste
PREPARATION
If not already done, peel and devein the crawfish tails.
Spiralize the zucchini to create noodles. Set aside in a colander to let excess water drain.
In a small bowl, whisk together the nonfat Greek yogurt and lemon juice to create the creamy base.
Heat the olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds to 1 minute.
Add the crawfish tails to the skillet and gently warm them for about 2-3 minutes, being careful not to overcook.
Toss in the zucchini noodles and cook for another 2 minutes until slightly softened but still retaining crunch.
Lower the heat and stir in the yogurt mixture to coat the crawfish and zucchini evenly. Season with salt and pepper to taste.
Warm everything through for an additional minute, then remove from heat and serve immediately.
