INGREDIENTS
3 oz Ground Turkey
1/2 medium Sweet Potato
1/4 cup chopped Red Bell Pepper
1/4 cup diced Onion
2 large Eggs
1 tsp Extra Virgin Olive Oil
Salt & Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes for even cooking.
Heat half the olive oil in a non-stick skillet over medium heat. Add the diced sweet potato and cook for about 5-7 minutes until slightly tender and crispy on the edges.
Add the chopped red bell pepper and diced onion to the skillet. Sauté for an additional 3-4 minutes until the vegetables begin to soften.
Push the vegetables to the side of the skillet and add the ground turkey. Season with salt and pepper, breaking it up with a spatula. Cook until the turkey is fully browned and cooked through, about 5-6 minutes.
Mix the turkey with the vegetables and adjust seasoning if needed.
In a separate small pan, heat the remaining olive oil over medium heat. Crack the eggs into the pan and fry them to your preferred doneness.
Plate the turkey and sweet potato hash, and top with the fried eggs. Serve warm.
