INGREDIENTS
6 ounces Sirloin Steak
1 cup Green Beans
1 cup Cauliflower florets
1/4 cup Skim Milk
1 tsp Olive Oil
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Take the sirloin steak out of the fridge and allow it to come to room temperature. Season both sides generously with salt and pepper.
Preheat a heavy skillet or cast iron pan over medium-high heat. Once hot, add the steak and sear for about 3-4 minutes per side or until it reaches your desired level of doneness. Remove the steak from the pan and let it rest.
While the steak is resting, trim and wash the green beans. In the same skillet, add a teaspoon of olive oil and minced garlic. Sauté the garlic for about 30 seconds until fragrant, then add the green beans. Cook for 4-5 minutes until the beans are tender-crisp, tossing occasionally.
For the cauliflower mash, steam or boil the cauliflower florets until very soft, about 8-10 minutes. Transfer the cauliflower to a blender or use an immersion blender, add 1/4 cup of skim milk, and a pinch of salt. Blend until smooth and creamy.
Plate the seared steak alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Serve immediately.
