1 tsp Garlic Powder (3g)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Press the tofu gently between paper towels to remove excess moisture. Cut tofu into 1-inch cubes.
In a bowl, toss the tofu cubes with cornstarch, garlic powder, salt, and pepper until evenly coated.
Place the tofu cubes on one side of the baking sheet. Drizzle lightly with olive oil.
On the other side of the baking sheet, spread out broccoli florets. Season with a pinch of salt and pepper and a light drizzle of olive oil if desired.
Bake in the preheated oven for 25-30 minutes, flipping the tofu halfway through and stirring the broccoli for even roasting, until the tofu is crispy and the broccoli edges are slightly charred.
While baking, warm the cooked brown rice in a small pot over low heat or microwave until heated through.
