INGREDIENTS
6 oz Shrimp (peeled and deveined)
1 medium Zucchini
1 tbsp Unsalted Butter
2 cloves Garlic
1 tbsp Lemon Juice
1 tsp Olive Oil
Pinch of Salt
Pinch of Black Pepper
1 tbsp Fresh Parsley
PREPARATION
Pat the shrimp dry with paper towels and season lightly with salt and pepper.
Using a spiralizer or vegetable peeler, create noodles from the zucchini and set aside.
Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and sear for about 2 minutes per side until they become pink and opaque. Remove the shrimp and set aside.
In the same skillet, lower the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant.
Pour in the lemon juice and stir to combine, letting the sauce simmer for another 30 seconds.
Add the zucchini noodles to the skillet and toss in the lemon garlic butter sauce. Sauté the noodles for 1-2 minutes until just heated through but still crisp.
Return the shrimp to the skillet, gently mixing to coat them in the sauce and warm through.
Finish with a sprinkle of fresh parsley, adjust salt and pepper to taste, and serve immediately.
