INGREDIENTS
8 oz Salmon Fillet
1 medium Sweet Potato
1 cup Green Beans
1 tsp Olive Oil
1 clove Garlic
Salt and Pepper to taste
PREPARATION
Preheat a nonstick skillet over medium-high heat.
Season the salmon fillet with salt and pepper on both sides.
Add half the olive oil to the skillet and sear the salmon for about 3-4 minutes per side, or until the exterior is golden and the center reaches desired doneness.
While the salmon cooks, peel and boil the sweet potato until tender, then mash it lightly with a fork. Season with a pinch of salt.
Trim the ends of the green beans. In another pan, heat the remaining olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
Add the green beans and cook for 4-5 minutes, stirring occasionally, until they are tender but still crisp.
Plate the mashed sweet potato alongside the seared salmon and garlic green beans. Serve immediately and enjoy.
