Healthy Crispy Turkey Bacon Carbonara
A lighter twist on classic carbonara featuring crispy turkey bacon, perfectly cooked eggs, and fresh spiralized zucchini. This dish delivers a comforting creamy texture enriched by a hint of tang from nonfat Greek yogurt and a sprinkle of grated Parmesan, while keeping calories and fat in check.
INGREDIENTS
3 slices Turkey Bacon
3 large Eggs
1 medium Zucchini (spiralized)
1 tbsp Grated Parmesan Cheese
1/4 cup Nonfat Greek Yogurt
Salt & Black Pepper to taste
1 tbsp Fresh Parsley (chopped)
PREPARATION
Preheat a non-stick skillet over medium heat. Arrange the turkey bacon slices in the skillet and cook until they become crispy, turning once. Remove and set on paper towels to drain excess fat.
Using a spiralizer, transform the zucchini into noodles. Set aside.
In a bowl, whisk together the eggs and nonfat Greek yogurt until smooth. Stir in a pinch of salt and black pepper.
Keep the skillet on medium heat and add the zucchini noodles. Lightly sauté for 1-2 minutes until just tender, being careful not to overcook.
Return the crispy turkey bacon to the skillet and toss with the zucchini. Remove from heat and slowly pour the egg-yogurt mixture over the warm ingredients, stirring quickly so the residual heat gently cooks the eggs, creating a creamy sauce.
Sprinkle the grated Parmesan cheese over the top and mix until evenly incorporated. Adjust seasoning with extra salt and pepper if needed.
Garnish with freshly chopped parsley and serve immediately.
