Enjoy a beautifully seared salmon paired with garlicky green beans and a creamy sweet potato mash. This dish combines the rich, fatty notes of perfectly cooked salmon with the fresh crunch of green beans, and the comforting, smooth texture of mashed sweet potato, making every bite a delightful balance of flavors and textures.
INGREDIENTS
6.5 oz Salmon Fillet
1 medium Sweet Potato
1 cup Green Beans
2 cloves Garlic
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat a non-stick skillet over medium-high heat.
Season the salmon fillet with salt and pepper on both sides.
Once the skillet is hot, add the salmon fillet skin-side down. Sear for about 4 minutes, then flip and cook an additional 3-4 minutes for medium doneness.
While the salmon cooks, peel and cube the sweet potato. Boil the cubes in salted water until tender, about 10-12 minutes.
In a separate pan, heat the teaspoon of olive oil over medium heat. Add minced garlic (from 2 cloves) and sauté until fragrant, about 30 seconds.
Add the green beans to the garlic pan and sauté for 3-4 minutes until they are crisp-tender. Season with salt and pepper.
Drain the sweet potato and mash with a fork. For a creamier texture, add a splash of water or a small drizzle of olive oil, and season with salt and pepper.
Plate the sweet potato mash as a base, arrange the garlic green beans on the side, and top with the seared salmon. Serve immediately.
