Heat a non-stick skillet over medium-high heat with half the olive oil. Once hot, place the salmon skin-side down and sear for about 3-4 minutes until the skin gets crispy.
Flip the salmon and cook for another 2-3 minutes until it reaches your desired doneness. Remove the salmon from the pan and cover to rest.
While the salmon is resting, heat the remaining olive oil in a skillet over medium heat. Add the minced garlic and gently sauté until fragrant, about 1 minute.
