INGREDIENTS
300g Firm Tofu
1/2 cup cooked Brown Rice
1 cup Broccoli
1 tbsp Peanut Butter
1 tsp Low-Sodium Soy Sauce
1 tsp Lime Juice
1/2 tsp Garlic Powder
1 tsp Olive Oil
PREPARATION
Preheat your oven to 400°F.
Press the tofu to remove excess water. Once drained, cut the tofu into 1-inch cubes.
In a bowl, gently toss the tofu cubes with olive oil, garlic powder, and a pinch of salt if desired. Spread the tofu on a parchment-lined baking sheet.
Bake the tofu for 25-30 minutes, flipping halfway, until edges are golden and crispy.
Meanwhile, prepare the brown rice as per package instructions if not already cooked.
Chop the broccoli into florets. Toss with a little olive oil, salt, and pepper, and spread on another baking tray. Roast in the oven for about 15-20 minutes until tender and lightly charred.
For the peanut sauce, in a small bowl, whisk together peanut butter, low-sodium soy sauce, lime juice, and a splash of water until smooth and slightly runny. Adjust seasoning as needed.
To plate, arrange the roasted tofu, brown rice, and broccoli. Drizzle the peanut sauce over the tofu and serve immediately.
