INGREDIENTS
250g Extra-Firm Tofu
75g Shelled Edamame
1 cup sliced Red Bell Pepper
1 cup Broccoli florets
1 medium Carrot
1/2 cup Snap Peas
1 tbsp Sesame Seeds
2 cloves Garlic
1 tsp Fresh Ginger, grated
1 tbsp Low-Sodium Soy Sauce
1 tbsp Sesame Oil
1 tsp Cornstarch
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut into 1-inch cubes.
In a small bowl, combine the cornstarch with a pinch of salt and pepper. Lightly toss the tofu cubes in the cornstarch mixture until evenly coated.
Heat half the sesame oil in a non-stick skillet over medium-high heat. Fry the tofu cubes until they turn crispy and golden on all sides, then remove and set aside.
In the same skillet, add the remaining sesame oil. Sauté minced garlic and grated ginger until fragrant.
Add the red bell pepper, broccoli, carrot, and snap peas to the pan. Stir-fry the vegetables for about 4-5 minutes until they become tender-crisp.
Return the tofu to the skillet along with the shelled edamame and drizzle with low-sodium soy sauce. Toss gently to combine.
Sprinkle sesame seeds over the stir-fry, and stir well to ensure even distribution of flavors.
Serve immediately while hot, enjoying the contrast of crispy tofu and fresh, vibrant vegetables.
