INGREDIENTS
6 oz Lean Top Sirloin Steak
100g Baby Potatoes
90g Asparagus
0.5 tbsp Olive Oil
2 cloves Garlic
2 tbsp Fresh Herbs (Rosemary & Thyme)
Salt and Black Pepper
PREPARATION
Preheat your oven to 425°F for roasting the potatoes and asparagus.
Wash the baby potatoes and cut them into halves. Toss them with half of the olive oil, a pinch of salt, pepper, and a sprinkle of chopped fresh herbs.
Spread the potatoes on a baking sheet in a single layer and roast in the oven for 20-25 minutes until crisp and golden, tossing halfway.
While the potatoes roast, heat a skillet over medium-high heat. Pat the steak dry and season both sides generously with salt, pepper, minced garlic, and the remaining herbs.
Add a small drizzle of olive oil to the skillet and sear the steak for about 3-4 minutes per side for medium-rare (adjust time based on desired doneness).
In the last 5 minutes of the potato's roasting time, trim the asparagus ends and add them to another section of the baking sheet. Drizzle lightly with olive oil and season with salt and pepper.
Once everything is cooked, let the steak rest for 5 minutes before slicing. Plate the steak with a serving of roasted potatoes and asparagus.
Serve immediately and enjoy your balanced and hearty meal.
