INGREDIENTS
350g Extra Firm Tofu
50g Shelled Edamame
100g Broccoli
100g Red Bell Pepper
50g Carrot
50g Snap Peas
1 tbsp Sesame Seeds
1 tsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 Garlic Clove
1 tsp Fresh Ginger
PREPARATION
Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
In a bowl, lightly toss the tofu cubes with half of the sesame seeds and a pinch of salt if desired.
Heat sesame oil in a large non-stick skillet or wok over medium-high heat. Once hot, add the tofu cubes and cook until all sides are golden and crispy, about 5-7 minutes. Remove tofu and set aside.
In the same skillet, add minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.
Add broccoli, red bell pepper, carrots, and snap peas to the skillet. Stir-fry the vegetables for 3-4 minutes until just tender but still crisp.
Return the crispy tofu to the skillet along with the edamame. Drizzle low-sodium soy sauce over the mixture, tossing gently to combine.
Sprinkle the remaining sesame seeds over the stir-fry and give one final toss.
Plate the stir-fry immediately and enjoy this light yet satisfying dish.
