Enjoy a vibrant dish featuring a succulent salmon fillet crusted with crunchy pistachios, perfectly paired with tender asparagus roasted with a burst of lemon and fresh herbs. An exquisite blend of textures and zesty flavors makes this dish both satisfying and invigorating.
INGREDIENTS
5 ounces Salmon Fillet
0.5 ounce shelled Pistachios
6 Asparagus Spears
1/4 Lemon
2 tbsp Fresh Herbs (Parsley & Dill)
1 tsp Olive Oil
Salt & Pepper
PREPARATION
Preheat your oven to 400°F.
Finely chop the pistachios and mix with a pinch of salt, pepper, and 1 tablespoon of finely chopped fresh herbs. Set aside.
Pat the salmon fillet dry and season lightly with salt and pepper. Press the pistachio mixture evenly onto the top of the salmon to form a crust.
Trim the tough ends off the asparagus and arrange them on a baking sheet. Drizzle with olive oil, and season with salt, pepper, and any remaining fresh herbs. Squeeze lemon juice over the asparagus.
Place the pistachio-crusted salmon on the same baking sheet or on a separate one if preferred. Roast in the preheated oven for 12-15 minutes, until the salmon is just cooked through and the pistachio crust is lightly golden.
Remove from the oven and add a final squeeze of lemon over the salmon. Serve immediately with the roasted asparagus on the side.
