INGREDIENTS
6.5 oz Salmon Fillet (184g)
1 cup Green Beans (125g)
1 small Sweet Potato (130g)
1 tsp Olive Oil
1 tbsp Lemon Juice
1 tsp Garlic Powder
Salt & Pepper to taste
PREPARATION
Pat dry the salmon fillet with paper towels and season both sides with garlic powder, salt, and pepper.
Preheat a non-stick skillet over medium-high heat and add 1 teaspoon of olive oil.
Once the oil is shimmering, place the salmon fillet skin-side down and sear for about 3-4 minutes until a golden crust forms.
Flip the salmon and cook for an additional 3-4 minutes until the center is just opaque. Remove from the pan and drizzle with lemon juice.
Meanwhile, trim the ends off the green beans and steam them for about 4-5 minutes until crisp-tender.
For the sweet potato mash, bake or microwave the sweet potato until tender. Scoop out the flesh and lightly mash with a fork. Season with a pinch of salt and pepper.
Plate the seared salmon alongside the steamed green beans and a generous scoop of sweet potato mash. Serve immediately.
