Preheat the oven to 400°F (200°C).
Place the chicken breast on a baking tray. Drizzle with a small amount of olive oil, then season with garlic powder, mixed fresh herbs, salt, and pepper.
Peel (if desired) and dice the sweet potato into even cubes. Toss with a little olive oil, salt, pepper, and a sprinkle of herbs.
Arrange the sweet potato cubes on another baking tray and place in the preheated oven. Roast for about 25-30 minutes until tender and lightly caramelized.
Meanwhile, trim the ends of the green beans and toss them in a bowl with 1 tsp olive oil, salt, pepper, and a pinch of garlic powder.
Place the seasoned green beans on a baking tray and add to the oven during the last 15 minutes of the sweet potato’s cooking time.
Roast the chicken breast in the oven for about 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
Once all components are cooked, plate the chicken breast with a serving of roasted sweet potatoes and green beans. Enjoy your balanced and flavorful meal.
