INGREDIENTS
7 oz Wild Salmon Fillet
1 cup Green Beans
1.5 tsp Olive Oil
2 Garlic Cloves
1 cup Cauliflower Florets
1 tsp Unsalted Butter
2 tbsp Skim Milk
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat. Once hot, add half of the olive oil.
Place the salmon, skin-side down if applicable, in the skillet and sear for about 3-4 minutes until a golden crust forms.
Flip the salmon and cook for an additional 3-4 minutes, or until the fish flakes easily with a fork. Remove from the skillet and set aside.
In a separate pan, heat the remaining olive oil over medium heat. Add minced garlic (from the 2 cloves) and sauté briefly until fragrant.
Add the green beans to the pan and sauté for 4-5 minutes until they are tender-crisp. Season with a pinch of salt and pepper.
Meanwhile, steam the cauliflower florets until soft (about 8-10 minutes). Transfer to a bowl and add the unsalted butter and skim milk.
Mash the cauliflower until smooth and creamy, and season lightly with salt and pepper.
Plate the seared salmon alongside the garlic green beans and a serving of mashed cauliflower, and enjoy your balanced dinner.
