INGREDIENTS
8 oz Cod Fillet (227g)
1 medium Sweet Potato (200g)
2 cups cooked Spinach (90g)
2 tbsp Olive Oil
2 cloves Garlic
1 tbsp Lemon Juice
2 tbsp Fresh Parsley
2 tbsp Fresh Thyme
Salt and Black Pepper to taste
PREPARATION
Preheat the oven to 400°F.
Place the cod fillet on a lightly greased baking tray. Drizzle with 1 tablespoon of olive oil and squeeze lemon juice over the top. Sprinkle with chopped parsley, thyme, salt, and pepper.
Bake the cod for 15-18 minutes or until it flakes easily with a fork.
Meanwhile, peel and cube the sweet potato. Boil or steam until tender, then mash with 1 tablespoon of olive oil, a pinch of salt and pepper until smooth.
In a skillet over medium heat, add a small drizzle of olive oil and sauté minced garlic until fragrant. Add the spinach and cook until wilted, seasoning lightly with salt and pepper.
Plate the herb-baked cod alongside a generous serving of sweet potato mash and garlic spinach. Serve immediately and enjoy the harmonious blend of flavors.
