INGREDIENTS
5 ounces Chicken Breast (142g)
150g Broccoli
150g Sweet Potato
1 tsp Olive Oil
1 tbsp Lemon Juice
2 tbsp Fresh Herbs (Rosemary & Thyme)
2 Garlic Cloves
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C).
In a small bowl, whisk together lemon juice, olive oil, chopped fresh herbs, minced garlic, salt, and pepper to create the marinade.
Place the chicken breast on a baking sheet lined with parchment paper. Brush the chicken all over with the marinade, making sure to coat well.
Cut the sweet potato into cubes and toss with a little extra olive oil, salt, and pepper. Spread them on another section of the baking sheet.
Break the broccoli into florets, drizzle with a slight amount of olive oil, and season with salt and pepper. Arrange them on the baking sheet with the sweet potatoes.
Roast everything in the oven for 20-25 minutes. Check the chicken for doneness (internal temperature should reach 165°F) and ensure the vegetables are tender with a crispy exterior.
Remove from the oven and let the chicken rest for 5 minutes before slicing. Serve the sliced chicken with a side of roasted sweet potatoes and crispy broccoli.
