PREPARATION
Preheat a non-stick skillet over medium heat.
Season the chicken breast lightly with salt and pepper. Cook the chicken in the skillet until it is thoroughly cooked and slightly crispy on the outside, about 5-6 minutes per side. Once cooked, shred or dice the chicken into bite-sized pieces.
