INGREDIENTS
5 oz Lean Ground Turkey
1 large Egg White
1 medium Zucchini
1/2 cup Fresh Tomato Sauce
1 clove Garlic
1 tbsp Fresh Basil
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 375°F.
In a mixing bowl, combine the lean ground turkey, egg white, minced garlic, salt, and pepper. Mix until well incorporated.
Form the mixture into small meatballs, roughly the size of a golf ball.
Place the meatballs on a baking sheet lined with parchment paper and bake in the preheated oven for 15-18 minutes or until cooked through.
While the meatballs are baking, spiralize the zucchini to create noodles. If desired, lightly sauté the zucchini noodles in a non-stick pan with a few drops of olive oil for 2-3 minutes until just tender, retaining their crunch.
Warm the fresh tomato sauce in a small saucepan on medium heat, stirring occasionally. Add chopped basil to the sauce for added flavor.
Plate the zucchini noodles and top with the turkey meatballs. Spoon the warm tomato sauce over the top, and garnish with additional fresh basil if desired.
