INGREDIENTS
4 large egg whites (approx. 120g)
1 link turkey sausage (approx. 60g)
1/4 cup low-fat cottage cheese (approx. 60g)
1 cup raw spinach (approx. 30g)
1 medium sweet potato (approx. 130g)
2 teaspoons olive oil (approx. 9g)
PREPARATION
Preheat your oven to 400°F for roasting the sweet potato.
Wash the sweet potato and prick it with a fork. Rub it lightly with 1 teaspoon of olive oil and place it on a baking sheet.
Roast the sweet potato in the preheated oven for 25-30 minutes until tender.
While the sweet potato is roasting, spray a non-stick skillet lightly and add the turkey sausage. Cook over medium heat until browned and heated through. Remove and set aside.
In the same skillet over low-medium heat, add the egg whites. Stir gently until they begin to set.
Add the fresh spinach and stir until the spinach wilts, then fold in the turkey sausage.
Remove the skillet from heat and gently stir in the low-fat cottage cheese.
Slice the roasted sweet potato and serve alongside the scramble. Drizzle the remaining 1 teaspoon of olive oil over the dish if desired.
