Enjoy a vibrant bowl featuring crispy roasted tofu, tender edamame, and a medley of colorful vegetables. Enhanced with a whisper of hemp seeds and subtle seasonings, this bowl delivers a satisfying crunch and balanced flavor for a nourishing lunch.
INGREDIENTS
250g Firm Tofu
116g Shelled Edamame (~3/4 cup)
150g Mixed Roasted Vegetables
0.5 tbsp Hemp Seeds
0.5 tsp Olive Oil
1 tsp Soy Sauce
Pinch Garlic Powder
Salt and Pepper to taste
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut into 1-inch cubes.
Preheat your oven to 425°F (220°C). Toss the mixed vegetables with a little salt, pepper, and if desired, a minimal drizzle of olive oil. Spread on a baking sheet and roast for 20-25 minutes until tender and lightly caramelized.
In a bowl, gently toss the tofu cubes with soy sauce, garlic powder, and a half teaspoon of olive oil. Spread the tofu on a separate baking sheet and bake in the oven for 20-25 minutes, flipping halfway through, until the edges are crispy.
While tofu and vegetables are roasting, prepare the edamame by warming them slightly if desired.
Assemble the power bowl by layering the roasted tofu, edamame, and vegetables. Sprinkle hemp seeds over the top and finish with a pinch of salt and pepper as needed.
Serve warm and enjoy your balanced, protein-packed lunch.
