PREPARATION
Preheat your oven to 400°F. Wash the sweet potato, poke several times with a fork, and roast it in the oven for 35-40 minutes until tender.
While the sweet potato is roasting, heat a non-stick skillet over medium heat and add 1.5 teaspoons of olive oil.
Crumble the turkey sausage link into the skillet and sauté for about 3-4 minutes until lightly browned.
