250g Extra-Firm Tofu

1 tbsp Soy Sauce
1 tsp Sesame Oil
1 tsp Rice Vinegar
1/2 tsp Fresh Ginger, minced
PREPARATION
Press the tofu to remove excess moisture and cut it into small cubes.
In a non-stick skillet over medium heat, warm the sesame oil and add the tofu cubes. Fry until golden and crispy on all sides.
Push the tofu to one side of the pan and add the minced garlic, ginger, and chopped green onion. Sauté briefly until fragrant.
Add the cooked brown rice, shelled edamame, and mixed vegetables to the pan. Stir-fry together making sure the rice is evenly mixed and heated through.
