Pat the chicken breast dry with a paper towel. Rub it with olive oil, crushed garlic, mixed dried herbs, salt, and pepper.
Place the seasoned chicken breast on a baking sheet lined with parchment paper.
Cut the sweet potato into 1/2-inch thick rounds or cubes. Toss them with a drizzle of olive oil, a pinch of salt, and pepper.
On another section of the baking sheet, spread out the sweet potato pieces and broccoli florets.
Drizzle a tiny amount of olive oil over the broccoli and sprinkle with a little salt and pepper.
Place the baking sheet in the preheated oven. Roast for about 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F), the sweet potatoes are tender, and the broccoli edges are crispy.
Take the tray out of the oven, let cool slightly, and serve your balanced meal warm.
