INGREDIENTS
6 oz Salmon Fillet (170g)
1 cup Green Beans (125g)
1 cup Cauliflower (107g)
1 tsp Olive Oil (5g)
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry, season generously with salt and pepper.
Heat a non-stick skillet over medium-high heat. Sear the salmon skin-side down for about 4-5 minutes until the skin is crispy, then flip and cook for another 3-4 minutes until cooked to your liking.
Meanwhile, steam the cauliflower until very tender (about 10 minutes). Transfer to a bowl and mash with a fork or potato masher until smooth. Season with a pinch of salt and pepper.
In a separate pan, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Add the green beans and sauté for about 4-5 minutes until tender-crisp. Season with salt and pepper.
Plate the salmon alongside the garlic green beans and a generous scoop of cauliflower mash. Serve immediately.
