INGREDIENTS
120g Chicken Breast
2 tbsp Panko Breadcrumbs
1 large Egg White
1 Whole Wheat Burger Bun
0.5 oz Fresh Mozzarella
1/4 cup chopped Tomato
1 clove Garlic
1 tbsp Fresh Basil & Oregano (chopped)
1 leaf Lettuce
PREPARATION
Preheat your oven to 400°F. Lightly spray a baking sheet with cooking spray.
In a shallow dish, combine the panko breadcrumbs with a pinch of salt, pepper, and any additional preferred spices.
Place the chicken breast on a cutting board and pat dry. Brush the chicken lightly with beaten egg white to help the panko adhere.
Coat the chicken breast evenly with the panko mixture.
Arrange the coated chicken breast on the baking sheet and bake for 20-25 minutes or until the chicken is fully cooked and the crust is crisp.
While the chicken bakes, prepare the garlic-herb tomato sauce: In a small bowl, mix the chopped tomatoes, minced garlic, and chopped fresh basil and oregano. Add a pinch of salt and pepper to taste.
Once the chicken is done, place it on the bottom half of the whole wheat burger bun. Top with the fresh mozzarella so it begins to melt on the residual heat.
Add a leaf of lettuce on top, then spoon the garlic-herb tomato sauce over the chicken and cheese.
Close the burger with the top bun and serve immediately.
