200g Firm Tofu
2 oz Whole Wheat Noodles
1/2 cup Edamame
1 medium Bell Pepper
1 small Carrot
1/2 tbsp Peanut Butter
1 tsp Sesame Seeds
PREPARATION
Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
In a non-stick skillet, lightly pan-fry the tofu cubes with a splash of oil until all sides are golden and crispy. Set aside.
Cook the whole wheat noodles according to package instructions. Drain and set aside.
While the noodles cook, slice the bell pepper and carrot into thin strips.
