PREPARATION
Preheat your oven to 425°F for the potatoes.
Wash baby potatoes and slice them in half. Toss with 1 tsp olive oil, salt, pepper, and half of the chopped rosemary.
Spread the potatoes on a baking sheet and roast for 20-25 minutes until crispy and tender, flipping once halfway through.
While the potatoes roast, pat the steak dry with paper towels. Season both sides with salt, black pepper, and the remaining rosemary.
