INGREDIENTS
3 oz Lean Ground Beef (93% Lean)
4 cups Fresh Spinach
2 oz Part-Skim Ricotta
1 large Egg White
2 tbsp Diced Onion
2 cloves Minced Garlic
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 375°F.
In a skillet over medium heat, warm the olive oil and sauté the diced onion and minced garlic until translucent and fragrant.
Add the lean ground beef to the skillet. Season with salt and pepper, breaking it up with a spoon. Cook until the beef is browned and just cooked through.
Stir in the fresh spinach and let it wilt down slightly.
Remove the skillet from heat. In a bowl, combine the cooked beef-spinach mixture with the egg white to help bind the layers.
In a small separate bowl, mix the part-skim ricotta with a pinch of salt and pepper to enhance its flavor.
Spread half of the beef and spinach mixture in a lightly greased small baking dish. Dollop the creamy ricotta evenly over the beef mixture. Gently layer the remaining beef-spinach mix on top, pressing lightly to form layers.
Bake in the preheated oven for about 15-18 minutes until everything is heated through and slightly set.
Remove from oven and let it cool for a couple of minutes before serving to allow the flavors to meld.
