INGREDIENTS
6 oz Beef Tenderloin
1 cup Green Beans
1 tbsp Olive Oil
1.5 cup Cauliflower florets
2 tsp Butter
2 cloves Garlic
PREPARATION
Pat the beef tenderloin dry and season with salt and pepper.
Heat a skillet over medium-high heat. Sear the beef tenderloin 2-3 minutes per side until a golden crust forms, then lower the heat and cook to your desired doneness. Remove the beef and let it rest.
In the same skillet, add sliced garlic and a tablespoon of olive oil. Sauté briefly until fragrant.
Add the green beans to the skillet and toss to coat with olive oil and garlic. Sauté for 4-5 minutes until they are crisp-tender.
Steam the cauliflower florets until soft (about 8-10 minutes). Then transfer to a bowl.
Mash the steamed cauliflower with a couple of teaspoons of butter, a minced garlic clove, salt, and pepper to taste until smooth.
Slice the beef tenderloin and serve alongside the garlic green beans and creamy mashed cauliflower.
