INGREDIENTS
300 grams Extra Firm Tofu
100 grams Shelled Edamame
1 medium Red Bell Pepper
1 cup Broccoli
1/2 cup Snap Peas (halved)
2 cloves Garlic, minced
1 teaspoon Fresh Ginger, minced
1 teaspoon Sesame Oil
1 tablespoon Low-Sodium Soy Sauce
1 teaspoon Rice Vinegar
1 teaspoon Sesame Seeds
1 tablespoon Cornstarch
PREPARATION
Press the tofu to remove excess moisture, then cut into bite-sized cubes.
In a bowl, toss tofu with cornstarch until evenly coated.
Heat the sesame oil in a non-stick pan over medium-high heat and add the tofu cubes. Pan-fry until all sides are golden and crispy, then remove and set aside.
In the same pan, add minced garlic and ginger, sautéing briefly until fragrant.
Add the red bell pepper, broccoli, and snap peas, stirring for 3-4 minutes until vegetables are crisp-tender.
Return the crispy tofu to the pan along with shelled edamame, then drizzle with low-sodium soy sauce and rice vinegar.
Toss everything together to combine and heat through for another 2 minutes.
Finish by sprinkling sesame seeds over the stir-fry, then serve hot.
