This dish offers a harmonious blend of textures and a refreshing citrus note, making it a balanced and delicious choice for any meal.
INGREDIENTS
6 oz Salmon Fillet
8 Asparagus Spears
1 tsp Extra Virgin Olive Oil
Pinch Salt
Pinch Black Pepper
PREPARATION
Preheat the oven to 425°F (220°C).
Rinse and pat dry the salmon fillet, then season both sides lightly with salt and black pepper.
Heat a non-stick, oven-safe skillet over medium-high heat. Place the salmon fillet skin-side down and cook without moving for about 4-5 minutes until the skin is crispy and releases easily from the pan.
While the salmon is searing, trim the tough ends from the asparagus. Toss them with olive oil, salt, and pepper on a baking sheet.
Once the salmon skin is crispy, carefully flip the fillet and transfer the skillet to the preheated oven. At the same time, place the asparagus in the oven.
Roast the salmon for an additional 4-6 minutes until cooked through but still moist, and roast asparagus for about 8-10 minutes until tender and slightly caramelized.
Plate the salmon with the roasted asparagus on the side. Optionally, finish with a squeeze of lemon for extra brightness.
