INGREDIENTS
5 ounces Salmon Fillet
1 medium Sweet Potato
6 spears Asparagus
1 teaspoon Extra Virgin Olive Oil (for salmon)
0.5 tablespoon Extra Virgin Olive Oil (for mash)
1 clove Garlic
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season with salt and pepper.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium-high heat.
Sear the salmon fillet for about 3-4 minutes on each side until a golden crust forms and the interior is just opaque.
While the salmon is cooking, peel and dice the sweet potato. Boil the cubes in water until tender, about 10-12 minutes.
Once the sweet potato is soft, drain the water and mash with 0.5 tablespoon olive oil, minced garlic, and a pinch of salt and pepper.
Trim the woody ends off the asparagus. Steam the asparagus spears for about 4-5 minutes until tender yet crisp.
Plate the seared salmon alongside a serving of sweet potato mash and steamed asparagus. Serve immediately.
