INGREDIENTS
6 ounces Salmon Fillet (~170g)
1 cup Green Beans (~125g)
1 cup Cauliflower (~107g)
2 teaspoons Olive Oil (~10g)
2 ounces Nonfat Greek Yogurt (~56g)
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Add half of the olive oil.
Place the salmon skin-side down (if applicable) and sear for about 3-4 minutes on each side or until desired doneness is reached. Transfer to a plate and keep warm.
In the same skillet, add the remaining olive oil and sauté the minced garlic for about 30 seconds until fragrant.
Add the green beans to the skillet and sauté for 4-5 minutes until tender-crisp, seasoning with a pinch of salt and pepper.
Meanwhile, steam or boil the cauliflower until very tender, approximately 8-10 minutes.
Drain the cauliflower and transfer to a blender or food processor. Add the nonfat Greek yogurt, a pinch of salt, and pepper. Blend until smooth to create a creamy mash.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Enjoy immediately.
